L’Aceto Balsamico di ciliegia Cerasus Sanguine è realizzato grazie ad un innovativo processo di affinamento che consente di ottenere un prodotto inalterato, genuino e profumato, capace di esaltare il gusto dei piatti con cui viene abbinato, mantenendo inalterate le proprietà terapeutiche della materia prima con cui viene creato.

A differenza dell’aceto di vino, il nostro Aceto Balsamico di ciliegia non necessita di invecchiamento in botte, ma solo del riposo di circa un anno per stabilizzarsi, mantenendo, allo stesso tempo, le sue preziose caratteristiche organolettiche.

La ciliegia, infatti, contiene antiossidanti che riducono le malattie cardiache e combattono i radicali liberi contro le forme tumorali. Il flavonoide Queritrin, infatti, presente in discrete quantità, è uno dei più potenti agenti antitumorali in grado di combattere le cellule cancerogene.

Argentum

With a dark hazelnut color, this creamy nectar gently accompanies meat with strong taste, like game or boiled meat, or seasoned cheese. Traditional family dishes find a perfect ally in this cherry balsamic vinegar which is delicious on pastry products, too.
That is a cherry balsamic vinegar for red meat (wagyū, and in particular Kobe, horse carpaccio, roast beef, etc.) and seasoned and very seasoned cheese.
We recommend the use of this cherry balsamic vinegar in one of our recipes: Coppa di maiale alla Cerasus Sanguine (pork meat of the house) where in addition to pork meat you add soy sauce, teriyaki sauce, onion, and garlic with a side of peppers.

Cuprum

This is the most balanced of our cherry balsamic vinegar. Its harmonious taste is perfect on delicate dishes such as risotto, tartare and fresh cheese. It is amazing on the yogurth thanks to its dense form and rich taste.
It is the perfect cherry balsamic vinegar to go with dark chocolate, seasoned cheese, panettone and dishes like mango kulfi; however, its best match is with rice (risotto gorgonzola and pears, pumpkin risotto, and risotto morlacco and honey), sushi and sashimi.

Ater

Fresh and young, it is black coloured and the youngest cherry balsamic vinegar of our selection. It is an impeccable dressing for salads and entries and it is perfect to blend any kind of roast. If added when the dish is ready, it gives character to it thanks to its sour taste.
This is the ideal cherry balsamic vinegar for salads, fresh cheese, white meat, sweet fruit (e.g. peaches, apples and pears), roasted vegetables (radicchio, ..), and entries (cestino di parmigiano reggiano with shrimps, avocado and toasted almonds or zucchini flowers with filling, …).

A precious and delicious nectar

was born in a universe

that had come back to its original features.

 

Our cherry balsamic vinegar is produced with ancient mothers coming from those Marco Polo had imported from the East and is preserved in very old barrels.
The Serpent is indeed the symbol of life that renews. It represents the alchemical process, the cyclical alternation of distillation and condensation that is necessary to purify and bring to perfection raw material, that is Vignola IGP cherry according to our tradition.
Such a precious fruit originated from a seed which contains three souls: Passion along with Desire, the Search for an eternal Destiny, and the essence of the Spirit. These souls have found their home in Italy, a land that allowed them to give birth to a fruit with amazing properties whose guardian has been a maternal moon.
That fruit with soft, sensual lines with an intense red color attracted the attention of an old wolf that lived in an ancient farmhouse nearby. Charmed by that fruit, which appeared to be magical and able to give youth thanks to its incredible beauty, the wolf tried its best to make it its own. It wanted to give it to the master of the farmhouse, a really good man called Leo Bozzetto, as a sign of its gratitude for having been rescued many years before. Its instinct, which was the essence of the spirit, told the wolf that that would have been an important present for the master, his salvation.

When Mr Bozzetto saw the fruit, he immediately recognized it as the perfect ingredient for that distillate dear to him, which he had got to know during the years spent in distant lands.

Nobody considers this happened by chance: it was rather the true destiny of a man.

Each one of us comes into this world with a specific purpose even though we often forget to pursue the eternal destiny we have in ourselves.

The creation of the cherry balsamic vinegar allowed raw material, the precious fruit collected by the old wolf, to live forever, renewed and turned into this end-product.
The elixir aged in hundred-year-old wooden barrels, which preserved the cherry balsamic vinegar as only a mother could do.
At the right time, the moon lit up the rubies of the three goblets, one made of copper, the second of silver and the third one of gold, which would have contained the mother essence.
By that time the liquid, so bright red as blood, tasted of life: it was dense and enveloping, fragrant, pungent and sweet at the same time and ready to be offered to the world.
However, as only a caring father can feel, our good Leo understood that what he had created was too precious not to be protected. He knew that such gems containing the elixir with incredible properties didn’t have to fall into the wrong hands. For this reason, before the sun rose, under the impressive and wise eyes of the moon, he decided to hide the three goblets into the farmhouse in a remote place. He put as a guardian of the elixir the only living being able to preserve its essence: Re Serpente.
The Serpent spotted the eyes of a young man coming from distant places who was worthy of possessing the three goblets and trying the fine elixir. This boy, called Uriel De Pastors, from a family made of versatile artists and managers, delighted by the incredible taste of this nectar, has become the natural heir of the valuable discovery.
